Every participant completes a preference profile before arrival. It is not a checkbox asking whether anyone has allergies. It is a conversation our reservations team walks each person through — diagnosed allergies and intolerances, autoimmune conditions, medical restrictions, whatever protocol they are following, what they dislike, and the food they genuinely love. It goes directly to the chef in the villa that person is sleeping in, who reads it, plans the week around it, and has it in hand before anyone lands.

Separate, tailored dishes at every meal are simply how the kitchen works.

Celiac and gluten intolerance, anaphylactic nut allergies, dairy-free, vegan, vegetarian, diabetic and low-sugar, cardiac and low-sodium — and several of them at one table, three times a day, for a week. Halal is accommodated with advance notice. We will tell you plainly that we cannot offer certified Kosher preparation, though our chefs build vegetarian menus that hold to Kosher principles. What your group notices is that everyone eats well at the same time. Nobody is served last, and nobody has to explain themselves at the table.

We should be straight with you about one thing. You are booking whole houses rather than rooms from an allotment, so the shape of the group is settled early rather than adjusted late. The suites are the exception — four separate one-bedroom buildings adjoining the villas, so we can often take one or two more at short notice. What the whole-house model buys you is the chef, because a kitchen working only for your people is only possible when the house is only yours. The suites, Cottonwood Cottage, The Hermitage and Mullion Cove sit together on one stretch of shoreline — eight to thirty-two guests — and since retreat groups often cannot fill to double occupancy, we quote by villa and work the shape out with you early.

Jamaica’s own cooking is unusually kind to restricted diets. Ital, the Rastafari food tradition, produces some of the best vegan cooking anywhere — not a meat menu with things taken out of it. Ackee, callaloo, plantain, rice and peas and most of the classic repertoire are gluten-free by tradition rather than by adaptation. Your vegan participants are not eating around the edges of the menu. They are eating the thing the island is actually known for.
